All the grapes that were used for this Cava, are grown in the vineyards. In this region, there is a mediterranean climate with relatively constant weather conditions the whole year round. The process of wine making at Paxvinum combines ancient tradition with modern techniques. For their sparkling wines, they uses the so called 'méthode traditionnelle', used to make Champagne. The fermentation takes place at low temperature, to gain the best aromas. This Cava, Château Royal is the best Cava of Paxvinum. It is a dry, fruity sparkling wine with enough flexibility and complexitiy to please every wine lover. |
